Asian Chicken Pasta Salad

Asian style pasta salad combines spinach leaves, bean sprouts, red bell pepper, scallions, cooked chicken, and slivered almonds in a soy sauce and teriyaki based dressing.
Ingredients -

8 ounces Orzo, Small Shells or other small pasta shape, uncooked
2 cups Poached Chicken, cut into chunks
4 ounces Spinach Leaves, stems removed and sliced into strips
1/2 cup Bean Sprouts
1/2 Red Bell Pepper, ribs removed and cut into strips
2 Scallions, sliced
3 tablespoons Red Wine Vinegar
1 tablespoon Reduced-Sodium Soy Sauce
1 tablespoon Sesame Oil
2 teaspoons Teriyaki Sauce
1 1/2 tablespoons Prepared Chili Sauce
1 tablespoon Fresh Grated Ginger
3 tablespoons Slivered Almonds, toasted

 
Preparation:

1. Prepare pasta al dente, drain and rinse in cold water.

2. Combine pasta, poached chicken, spinach leaves, red bell pepper, and scallions in large serving bowl.

3. In small mixing bowl, mix together red wine vinegar, reduced-sodium soy sauce, sesame oil, teriyaki sauce, prepared chili sauce, and grated ginger. Whisk to mix thoroughly.

4. Toss Asian dressing with pasta salad.

5. Refrigerate until ready to serve.

6. Garnish with almonds just before serving.

Zucchini
Look for zucchini that are at most 6-inches long. Larger zucchini can be filled with seeds and should be avoided.
