Avocado Pasta Salad

Cooked penne pasta tossed in vinaigrette prepared from orange juice, orange marmalade, vegetable oil, white wine vinegar, and Dijon mustard. Mixture is refrigerated so the noodles will absorb the vinaigrette flavors. pasta salad is prepared from marinated noodles tossed with avocado slices, orange sections, red bell pepper squares, sliced green onion and chopped fresh cilantro. This delicious pasta salad recipe is best when served over cold assorted fresh salad greens.

Ingredients -

1/3 cups Orange Juice
3 tablespoons Orange Marmalade
1 1/2 tablespoons Vegetable Oil
1 tablespoon White Wine Vinegar
2 teaspoons Dijon Mustard
8 ounces Dry Penne Pasta, cooked, rinsed with cold water and drained well (4 cups cooked)
1 Avocado, seeded, peeled and sliced
2 Small Oranges, peeled and sectioned
1 medium Red Sweet Bell Pepper, cut into 1/2-inch squares
3 Green Onions, sliced diagonally
1/4 cup sliced Cilantro Leaves (lightly packed)

 
Preparation:

1. In large serving bowl, whisk together orange juice, orange marmalade, vegetable oil, white wine vinegar, and Dijon mustard.

2. Add pasta to sauce and mix well. Cover and refrigerate. Stir occasionally.

3. To serve add avocado slices, orange sections, red bell pepper squares, green onion and cilantro.

4. Toss and serve on assorted salad greens.

Radishes
Radishes should be firm, bright red, and leaves not wilted. Store in the refrigerator and use within a few days.
