Bacon Ranch Pasta Salad

Simple and tasty pasta salad combining pasta with bacon, baby carrots, and peas. Salad is tossed with mayonnaise, ranch dressing and seasoned with onion powder.

Ingredients -

3/4 cups Mayonnaise
1 (1 ounce) packet Hidden Valley Ranch Dressing Mix
1/4 cups crumbled, crisp Bacon
1/2 teaspoon Onion Powder
4-5 peeled Baby Carrots or 1 large Regular Carrot, shredded
2 cups uncooked Shell Pasta
1 cups Frozen Peas, thawed

 
Preparation:

1. In serving bowl, combine mayonnaise, Hidden Valley Ranch Dressing Mix, crumbled bacon, shredded carrots, and onion powder.

2. Place carrot mixture in refrigerator to chill.

3. Cook pasta al dente, drain in colander, rinse in cold water, drain, and cool.

4. Remove carrot mixture from refrigerator, and fold in pasta.

5. Gently fold in peas.

6. Refrigerate several hours.

7. Serve chilled.

One medium avocado will produce about ½ pound or 8 ounces of usable avocado flesh.

Peas come in a variety of shapes, sizes and varieties. Fresh peas are readily available and should be used as soon as possible, as the sugar in peas will turn to starch.
