Black Eyed Pea Pasta Salad

Marinated artichokes tossed with black-eyed peas, thin strips of provolone cheese, chopped green and red bell pepper, and thin strips of pepperoni. Pasta salad prepared from cooked tricolor spiral pasta, artichoke mixture, and mixture of mayonnaise, Italian salad dressing and reserved liquid from artichokes. Delicious Italian-style pasta salad recipe is perfect as a standalone salad or as a side dish for your favorite Italian entrée.

Ingredients -

1 (7-1/2 ounces) jar Marinated, Quartered Artichoke Hearts
1 cup Uncooked Tricolor Spiral Pasta, cooked to al dente, drained
1 (15-1/2 ounces) can Black-Eyed Peas, rinsed and drained
4 slices Provolone Cheese, cut into thin strips
1/2 cup chopped Green Pepper
1/2 cup chopped Sweet Red Pepper
1/2 cup sliced Pepperoni, cut into thin strips
1/2 cup Mayonnaise
1/4 cup Prepared Italian Salad Dressing

 
Preparation:

1. Drain the artichokes reserving 1/4 cup of the liquid.

2. Chop and set aside.

3. In a large bowl, combine the artichokes, peas, cheese, peppers, onion and pepperoni.

4. Add the pasta to the mixture.

5. Combine the mayonnaise, salad dressing and reserved artichoke liquid in a small bowl.

6. Pour the mixture over the pasta and toss to coat.

7. Cover and refrigerate for 2 hours before serving.
