Cilantro Tomato Pasta Salad

Light pasta salad features diced cucumber, diced tomato, chopped red onion, fresh lime juice, chopped cilantro, granulated sugar, coarse salt and fresh ground black pepper mixed with cooked small shell pasta.

Ingredients -

1 Cucumber, peeled and cut in half lengthwise, seeds scraped away with spoon
1 cup Ripe Red Tomatoes, diced
1/2 cup Red Onion, finely chopped
2 tablespoons Fresh Lime Juice, fresh
1 tablespoon Cilantro, chopped
1 teaspoon Granulated Sugar
1/4 teaspoon Salt
1/4 teaspoon Fresh Ground Black Pepper
1 cup Dry Small Shell Pasta, cooked and drained

 
Preparation:

1. Cut cucumber in half again lengthwise and dice cucumber.

2. In a large serving bowl, combine diced cucumber, diced tomato, chopped red onion, fresh lime juice, chopped cilantro, granulated sugar, salt and pepper.

3. Toss gently.

4. Chill 15-30 minutes before serving.
