Cold Pasta Salad

Pasta salad recipe combines cooked elbow macaroni, chopped green onion, diced cucumber, broccoli florets, and chopped carrot with dressing prepared from mayonnaise, fresh parsley, lemon juice, coarse salt and fresh ground black pepper.

Ingredients -

16 ounces Elbow Macaroni, cooked according to package directions, rinsed, drained
1 cup Sour Cream
1/2 cup Mayonnaise
1/2 cup chopped Fresh Parsley
1 tablespoon Lemon Juice
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup chopped Green Onion
1 cup Cucumber, diced 1/2 -inch
1 cup thawed Frozen Broccoli Florets
1/4 cup Carrot, chopped

 
Preparation:

1. In a large bowl, combine the sour cream, mayonnaise, parsley, lemon juice, salt and pepper.

2. Add the vegetables and pasta.

3. Toss gently.

4. Chill for 2 hours before serving.
