Easy Pasta Salad

Easy pasta salad recipe combines cooked Rotini pasta with fresh broccoli florets, halved cherry tomatoes, sliced ripe olives, reduced-fat Italian dressing and grated fresh Parmesan cheese.

Ingredients -

2 cups Rotini Pasta, uncooked
2 cups Fresh Broccoli Florets
1 cup halved Cherry Tomatoes
1/4 cup Pitted Ripe Olive slices
1/3 cup Reduced-Fat Italian Dressing
1/4 cup Parmesan Cheese, grated

 
Preparation:

1. Cook the pasta to al dente, adding the broccoli florets to the pasta during the last 2 minutes.

2. Drain and rinse in cold water.

3. Add the pasta to a medium sized serving bowl.

4. Add the tomatoes, olives, Italian dressing and parmesan.

5. Mix gently.

6. Cover and refrigerate for 2 hours before serving.

Wash lettuce and other greens thoroughly, and remove the outer leaves before storing.

To avoid soggy salads, always add dressing just before serving, or serve dressings on the side.
