Fiesta Pasta Salad

Creamy dressing prepared from mayonnaise, sour cream, minced fresh parsley, fresh squeezed lime juice, minced jalapeno chili pepper, and sea salt tossed with cooked macaroni twists, chopped tomatoes, chopped red bell pepper, chopped yellow bell pepper, sliced zucchini and sliced green onion to create this delicious and festive pasta salad recipe.

Ingredients -

1 cup Light Mayonnaise
1/2 cup Sour Cream
1/4 cup Fresh Parsley, minced
2 tablespoons Fresh Squeezed Lime Juice
1-2 Pickled Jalapeno Peppers, seeds removed, minced
1 teaspoon Sea Salt
8 ounces Twist Macaroni, cooked, rinsed, drained
2 large Tomatoes, chopped
1 sweet Yellow or Red Pepper, chopped
1 medium Zucchini, sliced
3 Green Onions, sliced

 
Preparation:

1. Stir together the mayonnaise, sour cream, parsley, lime juice, jalapenos and salt in a salad bowl.

2. Add the remaining ingredients.

3. Toss well.

4. Cover and refrigerate for 2 hours before serving.

Drying Greens

Excess moisture will cause stored greens to deteriorate quickly. To avoid watery salads, place greens in a colander after rinsing. Remove greens from the colander and pat dry with paper towels.
