Low Fat Shrimp Pasta Salad

Cooked Rotini pasta or other small shape pasta tossed with blanched peas, blanched green beans, thinly sliced vine-ripened tomatoes and cooked shrimp. Pasta salad recipe is completed with dressing prepared from fat-free mayonnaise, plain low-fat yogurt, nonfat milk, dried herbs and fresh ground black pepper.

Ingredients -
6 ounces Rotini Pasta
1 cup Frozen Peas
6 ounces Green Beans, cut into pieces
2 Vine-Ripened Tomatoes, halved vertically, then thinly sliced
3/4 pound Cooked Shrimp

Dressing:
1/4 cup Fat-Free Mayonnaise
1/4 cup Plain Low-Fat Yogurt
1 tablespoon Nonfat Milk
1 teaspoon Dried Mixed Herbs
Fresh Ground Black Pepper
 
Preparation:

1. Cook pasta to al dente.

2. After 2 minutes add the frozen peas and cook for 1 minute.

3. Drain both the pasta and peas in cold water.

4. Bring water to boil in a medium sized pot with a pinch of salt.

5. Add the green beans and cook for 5 minutes.

6. Drain and plunge the beans in a bowl of ice water.

7. When cool drain the beans again.

8. In a large serving bowl, add the salad ingredients.

9. In a small bowl, add the mayo, yogurt, mixed herbs and pepper to taste.

10. Whisk to combine.

11. Add milk to thin the dressing, if desired.

12. Serve.

Cauliflower

Cauliflower sliced thin make for a very nice presentation. Cauliflower flowers roughly chopped are difficult to manage with a fork.

Prepare Ahead

Most salads can be prepared well in advance, and if properly stored will be fresh for serving. At the very list, most vegetables can be nicely sliced and chopped and stored until ready to begin preparing your salad recipe.
