Mexican Style Bow Tie Pasta Salad

Bow tie pasta tossed with ground beef, pinto beans, ground cumin, chili powder, chopped tomatoes, whole kernel corn, chopped green bell pepper, shredded cheddar cheese, sliced green onion, low-fat yogurt, and medium salsa.

Ingredients -
8 ounces Bow Ties, Elbow Macaroni, or other Medium Pasta Shape, uncooked
8 ounces Lean Ground Beef
1 (16 ounces) can Kidney Beans OR 1 (16 ounces) can Pinto Beans, drained
1/8 teaspoon Ground Cumin
1 teaspoon Chili Powder
2 medium Tomatoes, seeded and chopped
2 (8 ounces) cans Whole Kernel Corn, drained
1 small Green Bell Pepper, chopped
1/2 cup shredded Cheddar Cheese
1/2 cup sliced Green Onions
1 cup Low-Fat Plain Yogurt
1/2 cup Medium Salsa
1/2 cup broken Tortilla Chips
 
Preparation:

1. Cook the pasta to al dente then drain.

2. Brown the ground beef in a medium skillet.

3. Drain the excess oil.

4. Add the chili powder, cumin and beans.

5. Heat until warm.

6. Combine the meat, tomatoes, green pepper, corn, onion, cheese and pasta in a large serving bowl.

7. Whisk together the salsa and yogurt in a small bowl.

8. Pour the salsa mixture over the salad and toss well to combine.

9. Garnish with chips and serve with more salsa.
