Pasta and Green Bean Salad

Quick and easy pasta salad featuring cooked penne pasta combined with fresh green beans, oil and vinegar vinaigrette, crumbled Feta cheese, sliced radishes, chopped fresh mint leaves, and chopped toasted almonds.

Ingredients -
12 ounces Penne Pasta
1 pound Fresh Green Beans
1/2 cup bottled Vinaigrette
1 1/2 cups crumbled Feta Cheese
1 cup sliced Radishes
1/2 cup chopped Mint Leaves
1/2 cup Toasted Almonds, chopped
 
Preparation:

1. Using a large pot, add salt and bring the pot to a rolling boil.

2. Add the pasta and cook for 5 minutes, stirring often.

3. Trim the ends of the green beans.

4. Cut them in half, at a slant.

5. Add the beans to the boiling water and cook for 7 minutes.

6. Drain and cool the pasta and beans under cold water to stop them from further cooking.

7. Transfer them to a serving bowl.

8. Pour the vinaigrette over the mixture and toss well to coat.

9. Add the next four ingredients, toss to mix and coat.

Whenever possible, pack all salads in insulated containers and use frozen ice packs to keep the salad ingredients chilled.

Poaching Chicken

Poach chicken by cutting boneless, skinless chicken breasts into chunks and place in boiling water. Be sure there is adequate water to cover the chicken by an inch or two. Boil 12-14 minutes and drain.
