Pasta Salad with Shrimp and Olives

Cooked fresh shrimp are tossed with small shape pasta such as shells or bowties, diced celery, ripe olives, sliced fresh cremini mushrooms, sliced water chestnuts. Pasta salad is dressed with creamy dressing prepared from mayonnaise, sugar, vinegar, coarse salt and fresh ground black pepper.

Ingredients -

3 cups Water
1 pound Unpeeled Fresh Shrimp
1 (16 ounces) package Small Shape Pasta, cooked to al dente
1/2 cup diced Celery
1/2 cup Ripe Olives
1/2 cup sliced Fresh Mushrooms
1/2 cup sliced Water Chestnuts
3/4 cup Mayonnaise
2 tablespoons Sugar
1 tablespoon Vinegar
1/2 teaspoon Coarse Salt
1/8 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. In a large pot, bring the water to a boil.

2. Add the shrimp and return to boil.

3. Reduce the heat and simmer for 5 minutes.

4. Drain well and rinse with cold water.

5. Place the shrimp in the refrigerator for 30 minutes to chill.

6. Peel and devein the shrimp.

7. Combine the shrimp, pasta, celery, olives, mushrooms and chestnuts.

8. In a small bowl, combine the mayonnaise, sugar, vinegar, salt and pepper.

9. Pour the mayo mixture over the pasta mixture and toss until coated.

10. Cover the salad and chill for 2 hours before serving.
