Raisin and Red Apple Chicken Salad

Healthy and delicious chicken pasta salad. Whole wheat small shaped pasta, combined with chicken breast meat, diced red apple, green onions, raisins, mayonnaise, honey, Dijon mustard, and toasted almonds.
Ingredients -
2-1/2 cups uncooked Whole Wheat Rotini Pasta
2 cups cooked cubed Chicken Breast
1 cup Raisins
1 Red Apple, cored, cubed
2 Green Onions, sliced
1/3 cup Light Mayonnaise
2 tablespoons Honey
1 tablespoon Dijon Mustard
1/4 cup Toasted Slivered Almonds
 
Preparation:

1. Cook whole-wheat pasta according to package instructions.

2. Add pasta, cooked chicken, raisins, red apple, and green onions to large serving bowl.

3. In small bowl, combine mayonnaise, honey and Dijon mustard.

4. Pour dressing over pasta and toss to coat.

5. Top with slivered almonds just prior to serving.

6. Serve immediately, or chill until ready to use.

Toast slivered almonds on a baking sheet at 200 degrees until the nuts are browned, about 10 minutes.
