Salmon Pasta Salad with Cherry Tomatoes and Mozzarella

Alaskan salmon combined with cooked Fusilli pasta, halved cherry tomatoes, sliced cucumber, thin strips of mozzarella, chopped fresh parsley, and grated fresh Parmesan cheese. Pasta salad recipe is completed with lemon dressing prepared from extra-virgin olive oil, fresh lemon juice, minced garlic, dill weed, grated lemon peel, and fresh ground black pepper.

Ingredients -
1 (15-1/2 ounces) can Alaskan Red Salmon, drained, flaked
8 ounces Fusilli or Macaroni, cooked, drained and cooled
1 pint Cherry Tomatoes, cut in half
2 cups sliced Cucumber
1 cup Mozzarella Cheese, cut into thin strips
1/2 cup chopped Fresh Parsley
1/4 cup grated Fresh Parmesan Cheese

Lemon Dressing:
3/4 cup Extra Virgin Olive Oil
1/4 cup Fresh Lemon Juice
2 Garlic Cloves, minced
1/2 teaspoon Dill Weed
1/2 teaspoon Grated Lemon Peel
Fresh Ground Black Pepper, to taste
 
Preparation:

1. In a large serving bowl, add the salmon, noodles, tomatoes, cucumber, cheeses and parsley.

2. In a small bowl add the olive oil, lemon juice, garlic, dill, lemon peel and black pepper.

3. Whisk until combined.

4. Pour the dressing over the salad and toss until coated.

5. Serve.
