Salsa Pasta Salad

Radiatore multi color pasta cooked and chilled. Pasta combined with chopped onion, chopped red bell pepper, sliced black olives, diced vine-ripened tomatoes, diced green chilies. Pasta salad tossed with vinaigrette featuring distilled white vinegar, chopped fresh cilantro, garlic salt, fresh lemon juice, vegetable oil, white sugar, and chili powder.

Ingredients -

2 Cups Dry Rainbow Radiatore Pasta
1 Onion (chopped)
1 Red Bell Pepper (chopped)
1 Can Black Olives (6 ounce, sliced)
3 Tomatoes (diced)
1 Can Green Chiles (4 ounce, diced)
1/3 Cup Distilled White Vinegar
1/4 Cup Fresh Cilantro (chopped)
1 1/2 Teaspoons Garlic Salt
1/3 Cup Lemon Juice
1/2 Cup Vegetable Oil
1 Tablespoon White Sugar
1 Tablespoon Chili Powder

 
Preparation:

1. Cook the radiatore pasta until al dente in a In a large pot with boiling salted water.

2. Drain.

3. Combine the bell pepper, olives, chopped onion, green chilies and tomatoes in a large bowl.

4. Whisk together the vinegar, cilantro, garlic salt, lemon juice, vegetable oil, sugar and chili powder.

5. Mix cooked pasta with vegetables.

6. Toss with cilantro dressing and serve.

Flavored Pasta
Add 1 tablespoon of crushed dried herbs to pasta cooking water to flavor pasta.

Italian Flavored Pasta
For Italian flavored pasta add 1 tablespoon basil, Italian seasoning, or oregano. After cooking, use with your favorite recipe, or toss with olive oil or melted butter, Parmesan cheese, and season with fresh ground black pepper.
