Santa Fe Chicken Pasta Salad

Southwestern style chicken rotini pasta salad. Diced chicken, Parmesan cheese, yellow corn kernels, cilantro, green onion, and bell pepper tossed in tomato vinaigrette featuring V-8 juice, extra-virgin olive oil, red wine vinegar, chili powder, paprika, sea salt, and fresh ground black pepper.

Ingredients -

1 (16 ounces) package Rotini Pasta

Dressing:
1-1/4 cups V-8 Juice
1-1/2 tablespoons Olive Oil
1 tablespoon Red Wine Vinegar
1-1/2 teaspoons Chili Powder
3/4 teaspoon Paprika
1/2 teaspoon Salt
1/4 teaspoon Fresh Ground Black Pepper

1/2 cup grated Parmesan Cheese
1/2 cup cooked Yellow Corn Kernels
1/3 cup chopped Cilantro
1/4 cup chopped Green Onion
2 tablespoon diced Red Bell Pepper
2 tablespoon diced Green Bell Pepper
1 Boneless, Skinless Chicken Breast, cooked and diced

 
Preparation:

Dressing:
1. Whisk V-8 juice, olive oil, red wine vinegar, chili powder, paprika, salt, and pepper in a small bowl.

2. Cover and chill.

Pasta Salad:
1. Cook pasta al dente, remove from pasta water to colander, rinse with cold water, and drain.

2. Add pasta to large serving bowl. Pour dressing over pasta and toss.

3. Add Parmesan cheese, corn, chopped cilantro, chopped green onion, diced red and green bell pepper, and diced chicken

4. Cover and chill for several hours before serving.

 



Pasta Salad Making Tips -
White Onions
Smaller than yellow onions, white onions have thinner rings, resulting in a finer dice. White onions are somewhat sweeter than yellow onions.

Leeks
Try to buy leeks that are equal in size for even cooking. They should be smooth without wrinkled layers, and best if the green tops are unblemished.
