Penne pasta tossed with crisp bacon pieces, cooked shrimp, diced avocado and shredded cheddar cheese. Pasta salad is dressed with creamy dressing prepared from mayonnaise, fresh lemon juice, diced vine-ripened
tomato, crushed red pepper. Salad is served over shredded lettuce.
Ingredients -
1 (16 ounces) package Uncooked Penne Pasta, cooked al dente, rinsed, cooled
1/4 pound Bacon
1 pound Cooked Shrimp, peeled and deveined
2 Avocados, peeled, pitted and diced
1 cup shredded Cheddar Cheese
1 cup Mayonnaise
1/4 cup Lemon Juice
2 Tomatoes, diced
1 teaspoon Crushed Red Pepper
4 cups shredded Lettuce
Preparation:
1. In a skillet over medium heat, cook the bacon until crisp then crumble.
2. Combine the pasta, bacon and the rest of the ingredients, save the lettuce and toss to combine.
3. Serve the dressing over the salad and serve.
