1. In a large serving bowl, combine the pineapple, corn, cucumbers, raisins, shallots, pepper, parsley and pasta.
2. Toss to coat.
3. In a small bowl, combine the French dressing with the mayonnaise.
4. Whisk to combine.
5. Pour the dressing over the salad.
6. Arrange the lettuce leaves on a serving platter.
7. Transfer the salad to the platter and chill overnight.
8. Serve.
