Sweet Corn Pasta Salad with Cucumber and Pineapple

Pasta salad features diced fresh pineapple, sweet corn kernels, sliced Lebanese cucumbers, raisins, chopped shallots, sliced red bell pepper, chopped fresh parsley, French salad dressing and mayonnaise. Best when chilled overnight.

Ingredients -
9 ounces Shell Pasta, cooked until al dente, drained, cooled
1 large Fresh Pineapple, diced
7 ounces canned Sweet Corn Kernels, drained
2 Lebanese Cucumbers, sliced
1/3 cup plus 3 tablespoons Raisins
4 Shallots, chopped
1 Red Bell Pepper, sliced
1/3 cup Fresh Parsley, chopped
1/4 cup French Salad Dressing
1/4 cup Mayonnaise
2 cups Mixed Lettuce Leaves
 
Preparation:

1. In a large serving bowl, combine the pineapple, corn, cucumbers, raisins, shallots, pepper, parsley and pasta.

2. Toss to coat.

3. In a small bowl, combine the French dressing with the mayonnaise.

4. Whisk to combine.

5. Pour the dressing over the salad.

6. Arrange the lettuce leaves on a serving platter.

7. Transfer the salad to the platter and chill overnight.

8. Serve.
