Tangy Vegetable Pasta Salad

Delicious pasta salad features spiral pasta, fresh lemon juice, sliced Roma tomatoes, chopped green bell pepper, sliced radishes, chopped peeled cucumber dressed in a creamy dressing prepared from V8 Picante blend juice, fresh orange juice, fresh lemon juice, chopped green onion, canola oil, sugar, grated fresh lemon and orange zest, coarse salt and dill weed.  

Ingredients -
2-1/4 cups Uncooked Spiral Pasta
2 tablespoons Lemon Juice
3 Roma (plum) Tomatoes, sliced
1/2 cup chopped Green Pepper
1/2 cup sliced Radishes
1/2 cup chopped peeled Cucumber

Dressing:
1/3 cup V8 Juice (Picante blend)
1/4 cup Fresh Orange Juice
2 tablespoons Fresh Lemon Juice
2 tablespoons chopped Green Onion
1 tablespoon Canola Oil
1-1/2 teaspoons Sugar
1 teaspoon grated Lemon Peel
1 teaspoon grated Orange Peel
1/2 teaspoon Coarse Salt
1/2 teaspoon Dill Weed
 
Preparation:

1. In a large pot of salted, boiling water, cook the pasta to al dente.

2. Add the lemon juice to the water and let sit for 1 minute.

3. Drain the pasta under cold water.

4. Combine the pasta and vegetables in a large bowl.

5. In a small bowl, whisk together the ingredients for the dressing until combined.

6. Pour the dressing over the salad and toss to coat.

7. Cover and refrigerate for 2 hours.

8. Serve.

Storing Vinegar

Vinegar is so acidic it can be stored indefinitely at room temperature. Changes in color, and sediment collecting on the bottom of bottles generally don’t affect flavor.
