Tomato Basil Pasta Salad

Pasta salad prepared from Fusilli pasta, coarsely chopped vine-ripened tomato, chopped red onion, extra-virgin olive oil, red wine vinegar, minced fresh garlic, coarse salt, fresh ground black pepper, dried oregano, and chopped fresh basil leaves. Salad is best served at room temperature.

Ingredients -

3 large Vine-Ripened Tomatoes, coarsely chopped
1/3 cup chopped Red Onion
1/4 cup Extra Virgin Olive Oil
2 tablespoons Red Wine Vinegar
1 teaspoon minced Fresh Garlic
1/2 teaspoon Coarse Salt
1/2 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Dried Oregano
12 ounces Fusilli Pasta, cooked until al dente, drained
1 cup Fresh Basil Leaves, cut into thin strips

 
Preparation:

1. In a large bowl, mix the first 8 ingredients.

2. Let the mixture stand at room temp for 30 minutes or until the tomatoes release their juices.

3. Add the pasta to the tomato mixture and mix well.

4. Let the salad come to room temperature.

5. Add the basil.

6. Toss and serve.

Red Wine Vinegar

Red wine vinegar is produced from red wine. The quality of wine vinegar varies greatly. The highest quality wine vinegars are produced from great wines, and are allowed to mature for several years before bottling. Suitable substitutes include white wine vinegar, balsamic vinegar,  and sherry vinegar.


Pasta Salad Making Tips -
Fresh Garlic

The addition of fresh garlic adds authentic flavor and richness. Fresh garlic can be found in the produce department of local grocery stores and farmers markets and simply has no substitute.
