Tomato Pasta Salad with Green Onion

Pasta salad features angel hair pasta, chopped plum tomato, sliced carrot, chopped cucumber, thinly sliced green onion, extra-virgin olive oil, cider vinegar, and coarse salt. Salad is refrigerated several hours to allow flavors to meld. Serve chilled.

Ingredients -
1 (7 ounces) package Angel Hair Pasta, cooked to al dente, drained
4 Plum Tomatoes, seeded and chopped
1 cup thinly sliced Carrots
1 medium Cucumber, chopped
6 Green Onions, thinly sliced
2 tablespoons Extra-Virgin Olive Oil
2 tablespoons Cider Vinegar
1/2 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. Place the noodles in a large bowl.

2. Add the tomatoes, carrots, cucumber, and onions.

3. Whisk together the oil, vinegar, salt, and pepper in a large bowl.

4. Pour the mixture over the pasta mixture and toss to coat.

5. Cover and refrigerate for 3 hours.

Plum Tomatoes

Plum tomatoes are also known as Roma tomatoes and are readily available. They are smaller tomatoes in size than their beefsteak or vine-ripened counterparts. Plum tomatoes are generally low in liquid and seeds inside making them ideal for chopping and including in salads for presentation and low liquid level.

Angel hair pasta is incredibly thin long pasta shape used primarily for hot pasta dishes and in soups. The pasta cooks very quickly, so watch closely. Remove the pasta at the moment it appears finished as it will continue cooking after removed from boiling water.
