Tortellini Pasta Salad

Cheese tortellini tossed with extra-virgin olive oil, vegetable oil, white wine vinegar, pressed garlic, dried oregano, dried dill, chopped fresh basil leaves, diced green onion, chopped red bell pepper, thinly sliced celery, sliced carrot, sugar, seasoned salt and fresh ground black pepper.

Ingredients -
1 (16 ounces) package Cheese Tortellini, cooked al dente
1/2 cup Olive Oil
1/2 cup Vegetable Oil
1/2 cup White Wine Vinegar
1 Garlic Clove, pressed
1 teaspoon Dried Oregano
1/2 teaspoon Dried Dill
3 tablespoons Fresh Basil, chopped
2 Green Onions, diced
1/2 cup chopped Red Bell Pepper
1/2 cup Celery, thin sliced
1/2 cup Carrots, sliced, par-boiled & cooled
1 teaspoon Sugar
1/2 teaspoon Seasoned Salt
1/2 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. In a large serving bowl, combine the oil's, vinegar, garlic, herbs, vegetables, sugar and spices.

2. Add the tortellini and toss until coated.

3. Serve immediately.

Cheese tortellini can be made at home with some effort. The results will far surpass the prepackaged offerings in many cases. Cheese tortellini can be purchased at most supermarkets and can usually be found next to the prepackaged shredded cheeses.

White Wine Vinegar

White wine vinegar is produced from white wine. The quality can vary greatly. The highest quality wine vinegars offer the best flavor. Champagne vinegar would be a suitable substitute as would red wine vinegar or sherry vinegar if you do not mind the pink color they add.
