Tuna Macaroni Salad

Macaroni pasta combined with chopped green onion, chopped bell peppers, chopped fresh parsley, solid white albacore tuna, chopped celery, fresh lemon juice, chopped iceberg lettuce, mayonnaise, paprika and fresh ground black pepper.

Ingredients -

1 cup Uncooked Elbow Macaroni
1 teaspoon Sea Salt
1 quart Water
1/2 cup chopped Green Onion
1 cup chopped Red, Orange and/or Yellow Bell Peppers, stemmed and seeded
1/4 cup chopped Fresh Parsley, packed
2 cans Solid White Albacore Tuna, packed in Olive Oil (do not drain)
2 Celery Stalks, chopped
juice of 1/2 Fresh Lemon
1/3 head Iceberg Lettuce, sliced first and roughly chopped into 2-inch long strips
1/2 cup Mayonnaise
1/2 teaspoon Paprika
Fresh Ground Black Pepper

 
Preparation:

1. Add 1 cup of elbow macaroni to a saucepan in 1 quart of boiling water.

2. Add 1 teaspoon of salt.

3. Simmer for 10 minutes until the macaroni is al dente.

4. Remove from the heat.

5. Drain and rinse with cold water.

6. Mix the green onion, bell peppers, parsley, tuna, celery and lemon in a large bowl.

7. Fold in the lettuce and mayonnaise.

8. Mix well.

9. Add the paprika.

10. Add fresh ground pepper to taste.
